INGREDIENTS
· 2 EGGS
· ¼ CUP UNSWEETENED APPLESAUCE
· ½ CUP NONFAT GREEK YOGURT
· 1 CUP ALMOND MILK
· ¼ CUP SWERVE BROWN SUGAR
· 1 TSP BAKING POWDER
· 2 CUPS KODIAK MIX (I PREFER BUTTERMILK OR CINNAMON OAT)
· BLUEBERRIES
DIRECTIONS
1. COMBINE EGGS, APPLESAUCE, NONFAT GREEK YOGURT, ALMOND MILK, AND BROWN SUGAR
2. FOLD IN KODIAK MIX AND BAKING POWDER UNTIL JUST COMBINED (DON’T OVERMIX)
3. GREASE A 9X13 BAKING SHEET AND POUR BATTER IN IT
4. TOP WITH BLUEBERRIES (OR ANY OTHER TOPPING YOU WOULD LIKE; FRUIT, CHOCOLATE)
5. BAKE AT 375 FOR 20-25 MINUTES
6. LET COOL AND CUT SLICES (I LIKE TO MAKE 16 EQUAL PIECES)
