BLACK BEAN SALAD



INGREDIENTS

· 1 CAN PINTO BEANS, DRAINED & RINSED

· 1 CAN BLACK BEANS, DRAINED & RINSED

· 1 CAN KIDNEY BEANS, DRAINED & RINSED

· 1 CAN KERNEL CORN, DRAINED

· 1 BELL PEPPER, DICED

· 2 MINI CUCUMBERS, DICED

· ½ RED ONION, DICED

· SAUCE:

o 2 TSP HONEY

o 2 TBSP OLIVE OIL

o 2 TBSP APPLE CIDER VINEGAR

o SALT & PEPPER

o 2 TBSP WATER

DIRECTIONS

1. RINSE & COMBINE BEANS AND CORN

2. ADD IN DICED PEPPER, ONION & CUCUMBER

3. MAKE SAUCE BY WHISKING TOGETHER HONEY, OLIVE OIL, APPLE CIDER VINEGAR, WATER & SALT & PEPPER

4. HEAT SAUCE IN THE MICROWAVE FOR 1 MINUTE

5. COMBINE SAUCE WITH BEANS AND VEGGIES

6. ENJOY!
